CHEESY SCALLOPED POTATOES




*Ingredients :

• 6 peeled potatoes
• 2 C grated Parmesan cheese
• 3 tsp salt, divided
• 4 tsp olive oil, divided
• 1 sweet onion, cut to cubes
• 1 pound ground beef (455 g)
• 14 oz (410 g) diced tomatoes, 1 can, drained
• 4 tablespoons fresh parsley, chopped and divided
• 1 teaspoon paprika (2 g)
• Half a teaspoon pepper
• 6 cups of spinach (240 g)
• 2 garlic cloves, minced
• 1 c ricotta cheese (250 g)
• 1 cup shredded mozzarella cheese (100 g)

* Directions :

Heat oven to 350°F (180°C).
Using a knife or mandolin, cut the potatoes into slices 3 mm thick.
On a baking tray lined with parchment, sprinkle half of the Parmesan cheese and rub until evenly covered with parchment paper.
 
Lay the potatoes on top of the Parmesan cheese so that each potato overlaps the previous potato, both vertically and horizontally. Continue until the pan is completely filled with potatoes.
 
Sprinkle the rest of the Parmesan cheese evenly over the potatoes. Season with a teaspoon of salt. Bake for 30 minutes, until golden and potatoes are soft and slightly crunchy.
 
In a skillet, heat two tablespoons of olive oil over medium heat. Once the oil starts shimmering, add the onions and cook until caramelised, about 15 minutes.
 
Add minced meat and mix with onions until soft. Mix the tomatoes with 3 tablespoons of parsley, paprika, and 1 teaspoon each of salt and pepper. Stir and cook until beef is tender and fully cooked. Remove from heat.
In a skillet, heat two tablespoons of olive oil over medium heat. Add spinach and cook until wilted. Add 1 teaspoon of salt and garlic. Stir until smooth. Remove from heat.
In a bowl, combine spinach mixture and ricotta cheese. Sit aside.
Spread the spinach mixture evenly over the cooked potato paper.
Spread the meat mixture evenly over the spinach. Sprinkle mozzarella cheese over the beef.
Take one end of the potato paper holding the parchment paper and start rolling it up, making sure the ingredients don't stick out from the ends.
Once fully rolled, place the potato roll on parchment paper and bake for 15 minutes.
Sprinkle parsley for garnish. Cut it into slices and serve immediately.
