Seafood Boil

* Ingredients :

° 500 g frozen seafood cocktail (Pickard type)
° 1 tsp. grated ginger
° 1 onion
° 1 carrot
° 1 white leek
° 1 lemon kaffir
° 2 pieces of vegetable broth
° 1 tsp. Sesame oil
° pinch of hot pepper
° salt

1. Peel the carrots and grate them with a grid with large holes. Peel the onions and cut into slices. Cut the leeks in half lengthwise, rinse well, pat dry, and cut into thin slices.

2. Heat the oil in a casserole dish and put the carrots, shallots, onions and ginger to brown without coloring, stirring for 3 minutes over a high heat.

3. Add 1 liter of boiling water to the casserole, crumble the broth tablets, salt, season with hot pepper and stir until the liquids simmer over a low heat. Simmer for 5 minutes, then add the frozen seafood. Wait for the liquid to simmer again (on high heat), and let it sit for 3 minutes to cook over low heat.

4. During this time, rinse and dry the kefir lemon, grating its peel well.

5. Divide the contents of the casserole among the serving bowls, add a large pinch of Kaffir lime peel to each bowl and serve immediately.
