I love sweet potatoes and they taste a little sweet. Its big advantage? Low GI (50 vs 80 for potatoes), good source of slow carbs! Sweet potatoes are low in calories and high in fiber and potassium (and yes WW need to check this superfood's score! Ahhh).
*ingredients for 4 people):
°2 sweet potatoes (600g, peeled)
°1 tablespoon olive oil
°1 teaspoon tandoori spices (or paprika)
°1 tablespoon finely chopped parsley
°salt pepper
°1 red onion
*Preparation:
Preheat the oven to 190°C.
Peel the sweet potatoes and cut them into pieces.
Put the sweet potatoes in a salad bowl, pour in the oil and mix well until covered.
Spread on a baking tray lined with baking paper, then sprinkle with spices, parsley, salt and pepper.
Bake for 20 minutes first.
Peel and chop the red onion.
After 20 minutes of cooking, flip the sweet potatoes and add the red onions.
Continue cooking for 15 minutes.
