PHILLY STEAK CHEESE FRIES





Place the steak in the freezer for 45 minutes. Once it is stiff cut it into 1/8th thin slices, the thinner the really the better. Cover with a tablespoon of oil and set aside.


 
Potato cooking instructions according to the package; stay warm.

cheese sauce
Melt the butter in a medium sized saucepan.

Once the bubbles have subsided, add the flour and cook for 1-2 minutes until light brown.

Slowly add the warm milk to the butter-flour mixture, stirring constantly. Cook for 4-5 minutes until firm.

Remove from heat and slowly mix in cheese cubes until melted.

Cover and cook on the lowest heat possible until fully combined, stirring occasionally. stay warm.

Mix of meat, pepper and onion
Heat a large skillet over high heat.

Add the meat to the skillet and cook over high heat until the red color disappears.

Then remove from the pan and set aside.

Return the saucepan to the heat, add additional oil (if needed) and add the pepper and onion.

Cook, stirring often, until peppers soften and onions turn brown.

Return meat to skillet, stirring in pepper and onion mixture.

Cook until the meat, peppers and onions are caramelized. Remove from heat.

Potato collection
Place the cooked French fries on a plate or tray (see note).

Pour the meat mixture over the fried potatoes.

Half of the cheese sauce over the fries and meat.

Serve the rest of the sauce on the side.
